De padre irlandés y madre mejicana, a los dos años de edad su familia se trasladó a Texas y posteriormente a California. Consiguió la ciudadanía estadounidense en 1940. Cursó estudios, especialmente de pintura e interpretación, en el Polytechnic High School de Long Beach (California).

Obtuvo en su juventud el primer premio Frank Lloyd Wright por su diseño arquitectónico.

Fue galardonado con dos premios Oscar. En 1952 obtuvo el primero, al mejor actor secundario, por su interpretación de Eufemio Zapata en ¡Viva Zapata!. Participó en películas de directores italianos, como Dino de Laurentiis o Federico Fellini. Destacó en su papel del viejo Alexis Zorba en Zorba, el griego., por el que fue nominado al Oscar. En la película El loco del pelo rojo interpretó el papel del pintor Paul Gauguin, por el que consiguió su segundo Oscar como actor secundario.

Afectado de cáncer de garganta, falleció de una neumonía el 3 de junio del 2001.
